Today, we’re toasting the end of summer with a drink – and not just any drink, our new favorite summertime cocktail: the Paloma. What makes it so special? Simple. It’s light. It’s fizzy. And it turns out it’s actually Mexico’s most beloved cocktail, not the Margarita. (Fun fact we learned during our last trip).

WHAT YOU'LL NEED
2 oz. reposado tequila
2 oz. fresh grapefruit juice, strained
1 oz. grapefruit soda, like Jarritos
½ oz. fresh lime juice
1 tsp simple syrup or agave
Sugar and salt mixture, for rim
Sprig of mint or jalapeño slice
Ice
SETTING THE STAGE
To dress up the rim of your cocktail glass, slice a small piece of lime and run the wedge around the top of your glass. Dip the top in the sugar and salt mixture until you’ve caught enough on the edge. Add ice cubes and set it to the side.
MIXING IT TOGETHER
Using a cocktail shaker, combine the tequila, grapefruit juice, lime juice, soda, and some ice. Shake it up, and then strain and pour into your glass.
FINISHING TOUCHES
Throw a little sprig of mint and a grapefruit slice on top for a fresh accent. Or if you want a spicy kick, you can add a slice of jalapeno instead.
